Ahi & Wasabi Potatoes-
This is a great dish for one person or a small group. Well balanced nutrition when served with a steamed green vegetable, this low fat meal is fantastic for your fitness and weight loss program! It is also approved by your Los Gatos Fitness Trainer;-)
Grilled Ahi Tuna
1-4 pieces Fresh Raw Ahi Tuna
Marinade:
- 1 Part Rum
- 1 Part White Wine
- 2 Parts Thick Teriyaki Sauce
- 1 Clove Garlic - Smashed
- 1 Tbs. Fresh Grated Ginger
- Cracked Pepper
- Soak fish in marinade for 15 minutes at room temperature.
Prepare potatoes and steam your green vegetable while fish is soaking.
Wasabi Mashed Potatoes
Boil enough red potatoes, cut into 1 inch cubes, to serve the number of people you will be feeding.
Drain the water from the potatoes and place the potatoes in a mixing bowl.
Mash/mix potatoes until creamy while adding
- approximately 4 Tbs. Nonfat Milk per pound of potatoes
- 1/2 to 1 tsp. wasabi powder
- Salt to taste.
Sear the fish for 1 minute per side on a hot BBQ.
Serving
Place one scoop potatoes on plate and serve one piece of Ahi leaning against the potatoes. Lightly drizzle some teriyaki sauce on the Ahi for a glaze. Serve green vegetables beside.
