Last week a personal training client told me about something that absolutely disgusted me, made me kind of nauseous, and really pissed me off.

Now you may have already heard about it, and if so then you are probably feeling about the same as me…

But I want to share a solution with you that is Easy, Healthy, Tastes Good, and You Control.

Tbad stuffhe issue is called Pink Slime and it is f**g disgusting and wrong that our government is allowing this crap to be sold to us and put in our food.

I’ll make the description quick and simple.

Take all the crap that gets dumped at the meat processing plants:  bones, fat, scraps, and all the garbage from processing the beef and put it into a container. centrifuge

This crap all gets sent to some processing center where it is washed, centrifuged to separate out the actual meat, and then washed again is then being added to over 70% of the ground beef that is being sold in the United States.

ammoniaBUT I left out one important detail…the second wash is being done with water and AMMONIA to kill all the E-coli and bacteria that this crap has with it.

So they are feeding us chemically processed garbage that actually use to get put into dog and cat food...now we get it.pink slime recipe

They call the resulting product Pink Slime and all ground beef products in the US can have up to 15% of the volume made up of this garbage…and no disclaimer because the use of Ammonia is being called a cleaning process and not food!

So when you buy a burger from the local burger shop, you get Pink Slime.  When you buy hamburgers from the ballpark, you get Pink Slime.  When you buy ground beef from the grocery store, you get Pink Slime.  When you feed this crap to your kids…You get it?!?!?

You may not believe what I am saying here, and I didn’t really believe it either.  So today I did my research and found that it is actually true.

I had to laugh when I saw a hamburger ad on the side of his web page…Kind of made me sick!

You know those burgers have up to 15% Pink Slime...Yes, Pink Slime in San Jose too!

OK…you know me by now:  I love food and I care about the quality of the food I consume.  I prefer organic when possible, but I’m not religious about it.  And now I have no interest in eating any ground beef that I do not either do myself, or watch the damn butcher grind personally.

So what to do about it?

You see, ever since I got my new freezer, I’ve been shopping more at Costco and buying in bulk, vacuum sealing the food in individual serving sizes for either Denise or me, and thawing what I need to eat at an individual meal or for the day.

So on a shopping trip last week I grabbed a huge top round roast (actually there were 2) weighing in at about 5.5 pounds.

Now here is how easy it is to make your own ground beef, and what to use it on/in!

kitchenaid mixerFirst I simply sliced the roasts up into about 2 x 2 inch strips.
Then I put a meat grinding attachment onto the Kitchen Aid mixer (I think like 95% of the population has one), and set it up for a fin grind.

A couple minutes later and some seasoning, Iburger pattie had a HUGE hamburger ready to go on the grill, which just happened to be already heated.

I made another couple patties, packaged them up, and tossed them into the freezer.

But wait, I wasn’t done!

Nekitchenaid meat grinderxt I pulled of the fine grinder and went to a course grind and finished off the rest of the batch.  Took that meat and threw it into a nice Dutch oven with a bunch of seasonings, a beer, a can of tomatoes and a can of tomato sauce, cooked it for a couple hours on low heat, and I now have a big batch of Low-Fat Chili and I pretty much know exactly what is in it.

Later this summer when the new garden is in full swing, I will know EVERYTHING that will be in the next batch…and it will be very low cost too.

I’ll try to put together a video of the actual meat grinding process over the next few days, and maybe even show how to make the burgers and the chili…but I ate all the beef already, so it will have to wait;-)

Eat good food, and not Pink Slime…your body is worth the extra effort, and you may actually be saving money.

I still have to do my own research, but I believe markets like Lunardi's and Gene's do not use Pink Slime. Whole Foods may not use it either. Your solution (grinding your own meat) is the best way to assure you get the best meat with the lowest fat content. Some fat is needed to keep the meat from dryint out while cooking.

@ Michelle: You are welcome and thank you so much;-) Watch for upcoming info on grinding your own beef...I have some great ideas. 
@Mom: Thanks Mom! Love you! And I'm not positive about Genes and Lunardis, but it would surprise the hell out of me if they didn't grind their own and keep it clean. 
@Karen: Agreed, Whole Foods ROCKS! I'd love to go buy their meat and grind it myself, because that would be even better. Remember they are still out for profit (in case you couldn't tell by the prices;-O) So there is still going to be some fat and you don't know how much. 
However, with the comment I just made about fat in the beef, that is completely up to you when you grind it.  
For example: When I did the grind of the beef I got from Costco, I actually kept the thin layer of fat on the meat because it seemed so lean. The burger was totally lean, and could have used a bit more...but when I cooked it for the chili, there was a lot of juices I discarded. I didn't pull it all because as any chef knows: "Fat Is Flavor!"  
But I could see it in the chili after an hour or so of cooking...and I don't like that. (Someone made chili at a party I was at a while back and it was totally heavy on the fat and it landed in everyone's stomach like a load of bricks. Ooooffff!)

Does anyone know if there is anything like pink slim in ground turkey or if it's just beef?

@Sara: Have not heard of anything funky being done with ground turkey, but wouldn't put it past the industry! 
 
One thing about ground turkey would be that you don't really know what cuts are being ground...unless you do it yourself. 
 
If I see anything about turkey, I will do a post!
