Ahi Salad W/Mango-
I created this recipe for a low fat but tasty meal in the evenings that is easy to prepare.
- 1 Filet Fresh Ahi (Sashimi grade)
- Mixed salad greens
- 2 tsp. Wasabi powder
- 1 Tbs. Olive Oil
- 1/4 C. Rice Vinegar
- 1 tsp. Sesame Oil
- 1 Tbs. Fresh Chopped Garlic
- 1/2 Tbs. Fresh Grated Ginger
- 2 Tbs. Soy Sauce
- 1 Packet Equal (or sugar and honey if you prefer)
- 1/4 tsp. White Pepper
- Fresh cracked pepper
- 1 tsp. Sesame seeds
- 2 Tbs. Dijon Mustard
- 1/4 Ripe Mango - diced
Season the Ahi with a bit of soy sauce, cracked pepper, and some wassabi powder and sear briefly on each side. Meat should be rare.
Mix together all other ingredients, except the mango, for a dressing.
Cut the Ahi into cubes and toss with the greens, mango and dressing for a great meal in a bowl or on a plate.
