Paprika Scallops - Los Gatos Weight Loss Recipe

Paprika Scallops

Low Fat Version:

  • 1 LB. Fresh Sea Scallops
  • 1 TBSP. Butter
  • 1/2 Cup Fat Free 1/2 & 1/2 
  • 1/3 Cup Madeira
  • 1/2 tsp. Cornstarch mixed with 1 TBSP water
  • Salt Pepper TT
  • 1 Tsp. Paprika
  • Dash Cayenne Pepper
  • Sauté Scallops in butter over high heat for about 30 Seconds. Remove and place into bowl.
  • De glaze pan with Madeira and reduce to syrup.
  • Remove pan from heat and slowly whisk in 1/2 & 1/2 and cornstarch mixture.
  • Return to heat, stirring for 1/2 minute
  • Add scallops (and juice), salt, pepper, cayenne, and paprika.
  • Cook until scallops are done and sauce is reduced (only about 4-5 min.). Don't over cook scallops!

Not Low-Fat(at all!) Version, but great and easy for an off diet day:

  • 1/2 Cup Cream
  • 1/3 Cup Madeira
  • Salt Pepper TT
  • 1 Tsp. Paprika
  • Dash Cayenne Pepper
  • Sauté Scallops in butter over high heat for about 30 Seconds. Remove and place into bowl.
  • De glaze pan with Madeira and reduce to syrup.
  • Remove pan from heat and slowly whisk in cream.
  • Return to heat, add scallops (and juice), salt, pepper, cayenne, and paprika.
  • Cook until scallops are done and sauce is reduced (only about 4-5 min.). Don't over cook scallops!
